Swine and Dine YYC with Chopped Canada’s Dilan Draper at Avec Bistro, February 10th

It’s a new year and we’re back with our Swine and Dine dinner series across Alberta. Earlier this fall, we had a pork-centric dinner at Charcut that people really enjoyed and now for our first dinner event of 2015 in Calgary, we’re excited to head to Avec Bistro!

Consistently noted as one of the top French bistros in the city, Avec is located in the Beltline area of the city and known for their top notch food, a stellar wine program and a great selection of absinthe. But, let me tell you from personal experience, exploring the absinthe collection is best left for post-dinner, not beforehand!

Our Swine and Dine events are a great way for chefs to get creative in the kitchen, using Alberta Pork in some shape or form in each course of the dinner. Now, the ultimate creative battlefield for a chef has got to be Chopped Canada, the high-energy reality show that sees 4 chefs cooking off against one-another with odd ingredient combinations. On February 7th, Avec Bistro’s executive chef, Dilan Draper will be one of those individuals.

Now, our dinner is on February 10th, so if he wins, it will be extra exciting to attend and if he doesn’t win, well, then I guess we’ll just have to settle for delicious food without the star status. I’m ok with either outcome.

Amuse

Country paté, Avec sourdough, mustard seed crème fraiche and herb salad

1st

Confit pork cheek, creamed celeriac, apple and fennel allumette, Génépi reduction

2nd

Brined pork tenderloin, bacon and cherry marmalade, carrot purée, smoked brussel leaves

3rd

Tarte au sucre, bacon and praline ice cream

Count me in!
