June is Pork Month is back at for a second year in Edmonton!

Chefs at the Alberta Hotel Bar & Kitchen, Ampersand 27, The Common, The Harvest Room at the Fairmont Hotel Macdonald, Hardware Grill, The Marc, Nineteen, Pampa Brazilian Steakhouse, Red Ox Inn, Rostizado, The Royal Glenora Club, Sabor, Sunterra, TZiN, and The Workshop Eatery all have a passion for Alberta pork – each are featuring a new or signature Alberta Pork dish on their menu all month long.

Not only can you enjoy copious amounts of pork at each of these restaurants – each chef has shared their recipe and will be giving out a recipe card for diners to take home.

But if you want to try the real thing, like Chef Sean O’Connors pork belly with spring pea and buttermilk feature at the Red Ox Inn or Chef Jesse Morrison’s BBQ pork lettuce wraps with watermelon, yogurt, chilies & mint at The Common, stop by each of the participating restaurants during the month of June. YEG’s Little Miss Andrea’s 3 Favourite Local Pork Dishes

Edmonton food and lifestyle blogger Little Miss Andrea may be pint-sized, but the girl has an appetite, and she certainly knows her way around Edmonton’s food scene. 

I asked Little Miss Andrea to share her three favourite Alberta pork dishes that were being served up in Edmonton. In no particular order – she picked these three locally sourced and prepared dishes featuring Alberta pork:

Braised Bacon at Tzin

1. Braised Bacon at Tzin Wine & Tapas Bar

Chef Corey McGuire of Tzin uses Irving Farms bacon to create this sweet and savoury dish incorporating maple balsamic apple compote, apple mayonnaise, crostini, and topped with a calvados gastrique. It has been on the menu for quite some time now, possibly because Chef McGuire may get take some heat if he ever tried to take it off the menu.

2. Pork Belly Sandwich from Drift Food Truck

One of the first food trucks to hit the scene – Kara and Nevin’s Drift Food Truck signature dish helped make pork belly trendy in Edmonton.  Topped with pickled carrot & daikon, cilantro & chili mayo, this $8 Alberta pork belly sandwich is worth waiting in line for.

3. Rosti -Puerco at Rostizado

Andrea is one of many in love with the Rosti-Puerco at Rostizado. Chef Edgar serves up slow-roasted Four Whistle Farms Alberta pork at Rostizado either solo, or accompanied by chicken. Tender and juicy – the slow roasted pork can quickly disappear from their branded platters

Recap: Swine & Dine at Edmonton’s Rostizado

After a successful Swine & Dine to kick of 2015 at the Common in January, Edmonton’s tastiest dining series headed downtown to the Mercer building for a latin infusion at Rostizado.

Fresh off being named the Best New Restaurant in Edmonton by Avenue Magazine, I knew that the Tres Carnales behind Rostizado would come up with a satisfying and Alberta-pork packed Swine & Dine menu.

On Thursday night I was joined by 24 adventurous eaters for a three-course menu at Rostizado featuring Alberta pork from appetizer to dessert. We were greeted by our lovely hosts with a welcome glass of Cava Sangria – a treat that had Randall MacDonald of Call the Kettle Black raving.

For the first dish of the evening, chef Edgar Gutierrez and his culinary team treated our palates to a pork blood sope with smoked pork shoulder, avocado and fresh onion. Rich and flavour and packed with iron, the take on the traditional Mexican street food had our table buzzing with approval.

Our main dish, a duo of Alberta pork, featured both coffee ancho chile crusted pork tenderloin served with red mole & Michoacan style pork carnitas served with orange salsa. The combination of the spice from the chile on the pork tenderloin combined with the soft citrus sauce was incredible. The meat was accompanied by a gooey stack of chorizo potato gratin and bacon-glazed carrots; the gratin was so tasty we all wanted the recipe.

The benefits of being seated next to an open kitchen is that you often get to see your food being prepped, and on Thursday night we had the pleasure of watching Edgar and his team plate a twist one of their signature desserts.

Traditionally the churros at Rostizado are dusted with cinnamon and sugar and served with dulce de leche; however for Swine & Dine the strips of Mexican fried dough were topped with dulce de leche (caramel sauce) and chicharrón or fried pig skin. While this gluten-free girl couldn’t partake in the churro fun, I hear the combination of sweet and salt was the perfect way to end the meal.
