Spicy Bacon & Apple Jam

Ingredients

  • 1 lb (454 g) bacon, 1/2 sliced
  • 1 yellow onion, diced
  • 1 Spartan apple, peeled and diced
  • 1 jalapeño, seeds removed, diced
  • ½ cup (125 mL) cane sugar
  • ¼ cup (60 mL) ketchup
  • ¼ cup (60 mL) apple juice
  • ¼ cup (60 mL) water
  • 1 Tbsp (15 mL) hot mustard
  • 1 Tbsp (15 mL) chilli flakes
  • 2 tsp (10 mL) Worcestershire sauce
  • 2 tsp (10 mL) cinnamon
  • 1 tsp (5 mL) ground black pepper
  • ¼ tsp (1 mL) nutmeg

Preparation

Cook the bacon in a medium pan on medium-high heat for 5 minutes, stirring occasionally. Add in the onion, apple and jalapeño and continue to cook for 10 minutes.

Next, add remaining ingredients, reduce to medium heat and let mixture simmer for 25 minutes, stirring occasionally. Remove from heat and let cool slightly before puréeing with an immersion blender, or in batches in a blender or food processor to desired consistency.

Place into an airtight container and store in the refrigerator. Will keep for up to 10 days.
