Salt & Pepper Ribs with Asian-Inspired Dipping Sauce

Ingredients

  • 2 lb (1 kg) pork back or side ribs, thin membrane removed
  • 1 Tbsp (15 mL) salt
  • 1 Tbsp (15 mL) pepper
  • 1 tsp (5 mL) smoked paprika
  • ½ lime
Sauce
  • 2 Tbsp (30 mL) soy sauce
  • 1 Tbsp (15 mL) rice vinegar
  • 1 Tbsp (15 mL) honey
  • Juice of ½ lime
  • 1 garlic clove, minced
  • 1 green onion, sliced

Preparation

Preheat oven to 300°F.

In a small bowl, stir together the salt, pepper and paprika.  Rub the seasoning over both sides of the ribs and place the racks, rib-side down in a roasting pan or baking sheet. 

Roast until ribs have a nice crust and meat will easily pull away from the bone, about 2½ to 3 hours.

Sauce

Meanwhile, in a small bowl, whisk together soy sauce, rice vinegar, honey, lime juice and garlic. Sprinkle green onions on top.

Remove the ribs from the oven, and while still hot, squeeze some fresh lime juice all over the racks. Remove from the pan, plate, and serve with dipping sauce.
