Honey, Orange and Cinnamon Brined Pork Chops

Ingredients

  • 2 cups (500 mL) water
  • 2 cups (500 mL) white vinegar
  • 2 cloves garlic
  • 1 red onion, quartered
  • 1 cinnamon stick
  • 2 Tbsp (30 mL) liquid honey
  • 1 Tbsp (15 mL) orange zest
  • 1 Tbsp (15 mL) sea salt
  • 1 tsp (5 mL) chili flakes
  • 1 tsp (5 mL) pickling spice
  • 8 ice cubes
  • 4 bone-in pork chops

Preparation

Place all ingredients except ice cubes and pork chops into a medium pot and bring to a simmer on medium-high heat. Remove from heat and let cool for a few minutes.

Transfer to a large bowl or baking dish and add ice cubes.

Once ice cubes have melted, add pork chops. Cover the bowl with saran wrap and place in refrigerator for at least 6 hours, or overnight, if possible.

Once ready, pat chops dry with paper towel and cook as desired.

Total time: 30 minutes + 6 hours in refrigerator

Tip

This brine can be used for any other cut of pork!
