Chef Lalit Singh of Pampa Brazilian Steakhouse shares the restaurant's popular Grilled Parmesan-Crusted Pork Loin recipe.
1 boneless, pork loin (3-4 pounds)
5 cloves of garlic
1 tsp fine salt
¼ tsp ground black pepper
¼ tsp ground white pepper
½ cup canola oil
¼ cup white wine vinegar
¼ cup fresh lemon juice
¼ cup tap water
1 cup grated Parmesan cheese
Soak wooden skewers in cold water. Cut the pork loin into 1 inch cubes and place in a resalable plastic bag or container. For the marinade, combine all ingredients in a mixing bowl and blend well using either an immersion or regular blender. Marinate the pork for at least 6 hours before skewering. Grill over low to medium heat 8 - 10 minutes until cooked to medium. Sprinkle the grated Parmesan cheese onto all sides of the grilled pork loin and grill for another 2 minutes until the cheese forms a golden brown crust.
