Don’t overcook pork. People used to cook pork “very well” every time, often resulting in dry, tough meat. But these days, with improved food safety knowledge and better production methods in Canada, pork can be cooked safely to (160°F/71°C) or less, which produces a juicy and tender meal. When cooked correctly, pork should have a hint of pink in the middle (in a roast or very thick chop).
