Valbella Gourmet Foods – Made in Alberta Proscuitto
Last night I went to the first of a series of four dinners in Edmonton during the month of June called Taste Alberta Tuesdays.
Chef Cory Welsch created a 4-course $50 Taste Alberta menu packed with local ingredients from Alberta producers. First up was the ANTI PASTI with wild arugula, Valbella proscuitto, The Cheesiry’s sheep’s pecorino, and a Meadow Sweet Honey and Mighty Trio canola oil vinaigrette.
The plate comprised of all local ingredients was delicious, but I was excited to see an Alberta-made prosciutto as a feature on Chef Welsch’s opening dish.
Valbella Gourmet Foods was started in 1978 by Walter and Leonie von Rotz in Canmore, Alberta. Lately I’ve noticed their European style sausages, hams and air dried meats have been finding their way onto more and more charcuterie plates at restaurants around the province.
I think their prosciutto is sinfully delicious and perfect for sandwiches, served fresh on pizza, or as a star on a charcuterie platter.
