Perrot Family Secret Bacon Poppycock Recipe

IMG_3345Bacon Day is just around the corner and it is time to share the winning recipes in a bacon contest I announced a couple of weeks ago. Lisa dropped off a family recipe for bacon poppycock to Nicola and Alan Irving of Irving Farms at one of their four farmer’s market locations that I whipped up last night. I taste tested it on a few bacon-loving boys I know and they all gave their thumbs up.

Perrot Family Secret Bacon Poppycock Recipe

1 cup butter
1 1/3 cup brown sugar
2/3 cup corn syrup
11 cups plain popped popcorn
1 package of Irving Farms bacon, cooked and crumbled

 

Line a cookie sheet with parchment paper.

Place butter, sugar and corn syrup in a heavy pot and bring to a boil while stirring.

Reduce heat to medium and simmer 15 minutes while stirring (just bubbling so it doesn’t harden)

Remove from heat, stir in bacon and popcorn evenly to coat. Spoon mix onto cookie sheet and pat down. Allow to cool, break into pieces, and enjoy.
