First Calgary Swine & Dine Event a Huge Hit !
40 delighted pork connnosieurs were on hand Saturday, Sept. 27 at the inaugural Swine & Dine event held for the first time in Calgary at Charcut Roast House.
Chefs Connie DeSousa and John Jackson did not disappoint as they rolled out course after course of porcine delights: tomato salad from the chef’s backyard with Chicharron, Portugese tomato and bean stew with sour beer sausage, tomahawk pork chops (as tender as a great prime rib!) dressed with truffles, served with roasted brussel sprouts & cauliflower with a cheddar polenta on the side. Dessert was a cornucopia of piggy delights starting with bacon chocolate chip cookies, apple pie (pork fat in the crust) with whipped cream and bacon bits and a fondant piggy cake (made with pork fat). Talk about setting the bar!
