Sunterra Shoyu Pork Tenderloin (Video)

> A delicious marinated pork tenderloin inspired by traditional South Asian flavours.

 

Ingredients

1 cup (250 mL) ketjap manis (Indonesian sweet soy sauce)
½ cup (125 mL) water
1 tsp (5 mL) sesame oil
1 tsp (5 mL) lemon juice
1 cup (250 mL) fresh pineapple, cut into ¼-inch cubes
2 lb (1 kg) Sunterra Farm pork tenderloin, trimmed
2 Tbsp (30 mL) grated fresh ginger
1 tsp (5 mL) pureed garlic
3 Tbsp (45 mL) green onion, chopped
Freshly ground black pepper, to taste

Preparation

Make marinade by mixing together ketjap manis, water, sesame oil and lemon juice. Add in the pineapple cubes, green onions, ginger and garlic. Give the ingredients a good mix then place the pork tenderloin into the marinade. Add ground pepper to taste. Marinate for 4 - 5 hours.
Preheat the oven to 350°F. Heat a frying pan on medium-high until hot and place the pork tenderloin in the pan. Sear the meat on both sides and then place in the oven for 20-25 minutes. Cook until pork tenderloin has reached an internal temperature of 140°F (60°C) it is done. Remove from the oven, plate and serve.
