Spicy Maple Pork and Egg Scramble

Ingredients

Pork
  • 1 lb (454 g) ground pork
  • 1 egg
  • ? cup (85 mL) thinly sliced green onions
  • 1 Tbsp (15 mL) sriracha
  • 1 Tbsp (15 mL) maple syrup
  • 2 tsp (10 mL) soy sauce, or tamari if gluten sensitive
  • 2 tsp (10 mL) dijon mustard
  • 1 tsp (5 mL) chili flakes
  • ½ tsp (2 mL) ground black pepper
  • 1 tsp (5 mL) canola oil
Eggs
  • 8 eggs
  • 3 Tbsp (45 mL) milk or cream
  • ½ tsp (2 mL) sea salt
  • ½ tsp (2 mL) ground black pepper
  • 1 cup (250 mL) diced fresh tomatoes
  • ¼ cup thinly sliced green onions, for garnish

Preparation

Pork

Place all ingredients except canola oil in a medium bowl and mix with hands until combined.

Heat the canola oil in a large pan on high heat. Once nice and hot, add in the pork mixture. Let cook, stirring regularly, until the meat is completely cooked through and parts of the pork mixture begin to caramelize, about 10-12 minutes.

Keep warm on stove until eggs are ready.

Eggs

Heat a large pan on medium-high heat until hot. Whisk together the eggs, milk, salt and pepper in a medium bowl.

Once pan is nice and hot, add the eggs and let cook for 30 seconds. Lower heat to medium, and gently stir around the pan to allow eggs to continue to cook and scramble, about 2 minutes.

Remove from heat and stir in pork mixture and diced tomatoes. Top with green onions and serve.
