Southwestern-Marinated Pork Loin

Ingredients

½ cup (125 mL) hot sauce

¼ cup (60 mL) canola oil

¼ cup (60 mL) brown sugar

2 Tbsp (30 mL) chopped fresh parsley

1 tsp (5 mL) pureed garlic

Pinch chili powder

Salt and pepper, to taste

1 kg pork loin, trimmed and tied

Preparation

In a medium bowl, mix together all ingredients except for pork. Place pork in bowl, ensuring that it is covered on all sides with marinade. Marinate in refrigerator for 4-5 hours, or overnight.
Preheat oven to 350°F. Heat a medium, oven-safe skillet on medium-high heat. Sear pork until it is browned on all sides. Place skillet in oven for 25-30 minutes, or until pork reaches an internal temperature of 140°F (60°C). Allow pork to rest for 5-10 minutes before serving.
