In a large bowl, mix together dark ale, water, brown sugar, tomato paste, white wine vinegar, salt, pepper, cinnamon and cayenne until well-incorporated. Set aside.
Place pork ribs, onion, garlic, meyer lemons, leek, brussels sprouts and tomato in slow cooker. Pour liquid from large bowl over top. Cover, turn to low heat and braise for 4-5 hours. Let rest for 10-15 minutes before serving.
