Peruvian Spice Rub
  • 2½ Tbsp (37 mL) garlic powder
  • 2 Tbsp (30 mL) paprika
  • 1½ Tbsp (22 mL) cumin
  • 2 tsp (10 mL) freshly ground black pepper
  • 1½ tsp (7 mL) turmeric
  • ¾ tsp (3 mL) dried thyme
  • ¾ tsp (3 mL) ground red chillies
  • 2 pork tenderloins
  • 2 Tbsp (30 mL) Peruvian spice rub
  • 100 mL buttermilk (optional)
  • 100 mL canola oil, divided

In a small bowl, mix together spice rub ingredients until well-combined. Set aside.
Preheat grill to medium-high. Place pork in a mixing bowl and season with salt and 50 mL of canola oil. Quickly grill the pork to achieve grill marks - this helps to avoid burning the rub.
Place pork in a medium bowl and add the remaining oil, buttermilk and spice rub. Coat well and place on the upper level of your BBQ at medium low heat for approximately 14 minutes, flipping once or twice to make sure the gets cooked but doesn’t burn. Alternatively, roast in a 350°F oven for 14 minutes. Let pork rest for 8 -10 minutes before slicing and serving.
