Oven-roasted BBQ Pork Spareribs

> These fall off the bone ribs are tangy and just hit the spot for those cravings for ribs.

Ingredients

1 medium onion, chopped
2 stalks celery, chopped
3 Tbsp (45 mL) olive oil
2 Tbsp (30 mL) brown sugar
3 Tbsp (45 mL) champagne vinegar
¼ cup (60 mL) lemon juice
1 cup (250 mL) ketchup
1 Tbsp (15 mL) Worcestershire sauce
1 Tbsp (15 mL) Dijon mustard
? cup (85 mL) hot water
1 tsp (5 mL) salt
3 racks baby back ribs or spare ribs

Preparation

Brown ribs under broiler in oven.
Meanwhile, in a medium saucepan, cook onion and celery until soft in olive oil. Add remaining ingredients except ribs and bring to a boil. Lower heat and simmer for 15 minutes. Place ribs in baking dish. Pour half of the sauce onto ribs. Turn ribs over and add remaining sauce. Bake uncovered at 325°F (160°C) for 3 hours. Serve with coleslaw and french fries!
