Maple & Sichuan Peppercorn Brine

Ingredients

  • 2¼ cups (560 mL) water
  • ½ cup (125 mL) white vinegar
  • ¼ cup (60 mL) maple syrup
  • 3 Tbsp (45 mL) salt
  • 1 tsp (5 mL) whole sichuan peppercorns
  • 2 bay leaves
  • 2 cloves garlic
  • 3 ice cubes

Preparation

Place all ingredients except ice cubes in a medium pot and bring to a simmer on medium-high heat, about 3 minutes.

Transfer to a bowl, add ice cubes and let cool in the refrigerator. Place desired cut of pork in brine, ensuring that it is completely covered. Brine for several hours, preferably overnight, and cook pork as desired.

Yield: 3 cups of brine
