Maple Pork Bolognese

Maple Pork Bolognese

Ingredients

  • 1 lb (454 g) lean ground pork
  • Olive oil
  • 1 small yellow onion, diced
  • 2 carrots, diced, approx. 1 cup
  • 2 celery stalks, diced, approx. 1 cup
  • 5 cups (1.3 L) crushed tomatoes
  • 2 cups (500 mL) water
  • 1 tsp (5 mL) dried oregano
  • 1 tsp (5 mL) dried basil
  • 2 Tbsp (30 mL) unsalted butter
  • 1½ Tbsp (22 mL) maple syrup
  • 1 Tbsp (15 mL) balsamic vinegar
  • Salt and pepper, to taste
  • ¼ cup (60 mL) finely chopped fresh parsley

Preparation

Heat a large, deep pan over medium-high heat. Add ground pork and cook, breaking up large pieces with a wooden spoon until cooked through, about 5 minutes. Remove from pan and drain off any excess liquid. Next, in the same pan, heat a drizzle of olive oil over medium-high heat and cook down the onion, carrot and celery, approximately 6-7 minutes.

Return cooked pork to the pan and add the tomatoes, water, oregano and basil. Once the mixture starts to simmer, reduce to medium heat and let cook, uncovered, for 30 minutes.

Add butter, syrup and balsamic vinegar and continue to cook for another 15 minutes. Season to taste with salt and pepper and stir in chopped parsley. Keep warm on stove until ready to serve. Spoon generously on top of your favourite pasta.
