Bacon and Apple Pork Burger

Ingredients

  • 1 lb        Ground Alberta Pork
  • 1 lb        Bacon – thinly sliced
  • ½          Red pepper – finely diced
  • ½          Onion – finely diced or grated
  • 2            Granny Smith Apples – 1 diced, 1 sliced
  • 1 TB      Spice Rub (House of Q House Rub)
  • 6-8        Gruyere cheese - slices
  • Lettuce and Buns
  • BBQ Sauce (House of Q Apple Butter BBQ Sauce)

Preparation

Place the ground pork, red pepper, onion, grated apple and House Rub in a bowl.  Mix well and form burger patties from the mixture.  Wrap each burger patty with bacon completely surrounding the burger.  Place the patties in the refrigerator for 30-60 minutes to "set".

Preheat your grill for indirect, medium-high heat.  Place the burgers on the OFF side with the loose ends of bacon on the grill grate.  Cook for 10-15 minutes with the lid closed.  You are looking for the bacon to start to render on the burger patty. Once it is “set”, turn the burger over to cook the other side.  Brush the burger with Apple Butter BBQ Sauce then a grilled apple slice and then cheese.  Close the lid of your grill to finish cooking the burger but also to melt the cheese onto the bacon.  The burger is done when the internal temperature reaches 160 F/71 C.  Remove from the grill and place on top of a bun with lettuce.
