Apple Cinnamon Cake with Salted Caramel Bacon Sauce

Ingredients

Apple Cinnamon Cake

  • 3 eggs
  • 1 cup (250 mL) sugar
  • 1½ cups (375 mL) flour
  • ½ cup (125 mL) milk
  • ½ Tbsp (38 mL) butter, melted
  • 2 tsp (10 mL) baking powder
  • 1 tsp (5 mL) cinnamon
  • ½ tsp (3 mL) vanilla
  • 2 or 3 medium apples, cored and cut into slices/thin wedges

Salted Caramel Bacon Sauce

  • 1 cup (250 mL) sugar
  • ¼ cup (60 mL) water
  • ¾ cup (185 mL) whipping cream
  • 3½ Tbsp (53 mL) unsalted butter
  • 1 tsp (5 mL) sea salt  or kosher salt
  • 6 slices cooked bacon, cooled and crumbled into bits

Preparation

Apple Cinnamon Cake
Preheat oven to 350°F (175°C). Line a 9 × 13" cake pan with parchment paper.
Combine the eggs and sugar in the bowl of an electric mixer. Mix at medium speed until thick. Gradually add flour, milk and butter at low speed until blended. Mix on medium speed for an additional 3 minutes.
Add the baking powder, cinnamon, and vanilla and mix until blended.
Turn batter out into the prepared pan. Arrange apple slices on batter. Bake in preheated oven for about 30 minutes, or until a wooden pick inserted in center of cake comes out clean and apples are lightly browned. Remove from oven and cool before serving with Salted Caramel Bacon Sauce

Salted Caramel Bacon Sauce
In a heavy-bottomed saucepan, combine the sugar and water over medium-low heat until the sugar dissolves. Increase the heat and bring to a boil, without stirring. Boil until the syrup is a deep amber color, about 5 to 6 minutes.
Remove from heat and carefully stir in the cream; the mixture will bubble. Stir in unsalted butter and salt. Transfer to a dish and cool. Mix in bacon bits and drizzle generously on cake.
