Preheat oven to 350°F. In a bowl, combine the eggs, milk, heavy cream, flour, and whisk until batter is bubbly.
Grease a medium sized oven-safe skillet with canola oil. Pour 1 cup of the batter into the skillet and bake in preheated oven for 7 minutes. Remove from the oven and carefully place the apple, bacon and cheese on top of this layer. Gently pour the remaining batter gently over top.
Bake again for approximately 45 minutes, or until it is golden and puffy on top. A tester inserted into the centre of the clafoutis should come out clean. Serve warm or at room temperature.
