Alberta Pork Chop, Maple Cider, White Bean Ragout

Ingredients

  • 4                      Loin Cut Alberta pork chops (boneless roughly 225 g or 8 oz.)
  • 1 lb.                 mushrooms – 1” pieces (Portobello, shiitake, or crimini)
  • ½ oz.              chopped oregano or sage
  • 4 oz.                maple syrup
  • 4 oz.                St. Ermite cheese (or Blue cheese)
  • salt & pepper to taste

Maple Cider Brine

  • 16 fl. oz.                      maple syrup
  • 16 fl. oz.                      apple cider vinegar
  • 4 fl. oz.                        soya sauce
  • 16 fl. oz.                      vegetable oil
  • 2 fl. oz.                        Dijon

White Bean Ragout (best to make the day before)

PART A

  • 1 lb.                          sliced bacon cut in 1” pieces (cook to 90% doneness)
  • 3 oz.                            ¼ " diced carrot
  • 3 oz.                            ¼ " diced celery
  • 3 oz.                            ¼ " diced leek
  • 1 tablespoon             fine chopped garlic
  • 1 tablespoon             salt
  • 1 teaspoon                 pepper
  • 2 teaspoon                thyme
  • 1 ½ tablespoon        oil

 

PART B

  • 1 lb.                            white beans (soaked overnight)
  • 24 fl. oz.                    chicken stock

Preparation

Maple Cider Brine

Whisk all ingredients well, stir before use. Discard marinade after use.

White Bean Ragout

Boil Part B approx. 1½ hrs until tender, drain well. Sweat Part A until soft, mix with beans.

Put it Together

Place pork in marinade for 8 hours, fully covered.  When ready, grill or roast pork chop to medium, season with salt & pepper.  In a medium-hot pan with a small amount of canola oil, add mushrooms and herbs and cook until tender and slightly brown.  Add salt and pepper to taste and maple syrup. Place chops on plate with a serving of white bean ragout. Divide mushrooms over each chop. Sprinkle about 1 oz. of crumbled cheese on top.
