Place pork in a plastic bag, non-metal bowl or sealable container. Blend soy sauce, water, molasses, brown sugar, garlic, coriander and pepper in a saucepan and bring to a boil until sauce thickens then cool, stir in lime juice and sambal oelek. Pour over pork, seal or cover and marinate in the refrigerator a min. of 6 hours or up to 24 hours.
Preheat BBQ to medium low, place steaks on grill (discard marinade), close lid and cook for 6-8 min. per side for medium doneness. Take off BBQ and slice into thin slices.
Meanwhile, arrange greens on 4 plates; add grapes, melon and orange slices. Top with pork and serve with vinaigrette.
