Grilled Thai Pork Salad

  • 4 pork leg inside steaks, bonless
  • 1/2 cup (60 ml) each soy sauce and water
  • 2 Tbsp (30 ml) dark molasses
  • 1/4 cup (60 ml) brown sugar
  • 1 garlic clove, minced
  • 1/2 tsp (2ml) coriander
  • black pepper to taste
  • 1/3 cup (73 ml) fresh lime juice
  • 1/2 tsp (2 ml) sambal oelek
  • 1 bag mixed field greens
  • half cantaloupe, cut in think slices
  • 1 cup (250 ml) seeded red grapes, halves
  • 1 orange, peeled and sliced
  • 1/4 cup (60 ml) raspberry vinaigrette


Place pork in a plastic bag, non-metal bowl or sealable container. Blend soy sauce, water, molasses, brown sugar, garlic, coriander and pepper in a saucepan and bring to a boil until sauce thickens then cool, stir in lime juice and sambal oelek. Pour over pork, seal or cover and marinate in the refrigerator a min. of 6 hours or up to 24 hours.

Preheat BBQ to medium low, place steaks on grill (discard marinade), close lid and cook for 6-8 min. per side for medium doneness. Take off BBQ and slice into thin slices.

Meanwhile, arrange greens on 4 plates; add grapes, melon and orange slices. Top with pork and serve with vinaigrette.
