Recipe: Bacon Cheddar Biscuits
It is finally time to celebrate international Bacon Day at Lux Steakhouse! Our second winner in the Irving Farms recipe contest is Cindi who submitted a bacon cheddar biscuit recipe. She has won a ticket to tonight’s bacon-filled festivities at Lux including a whole roasted pig from Irving Farms, a dessert cook-off between Chef Paul Shufelt and Chef Andrew Cowan, and of course -a lot of fundraising in support of YESS.

As Cindi recommended, I served these biscuits warm with red pepper jelly.
Bacon Cheddar Biscuits
2 cups flour
5 tsp baking powder
1 tsp salt
3 tbsp white sugar
1 tsp cream of tartar
1/4 cup cold butter
1 cup milk
8 slices cooked bacon, cut small
1/2 cup sharp cheddar, cut into cubes or shredded
1. Preheat oven to 425 degrees
2. Combine flour, baking powder, salt, sugar and cream of tartar. Cut in butter with a pastry knife (or use two butter knives with ninja like moves). Add milk all at once. Stir in bacon and cheddar (please resist temptation to sample the bacon).
3. Turn dough out onto lightly floured surface. Roll or pat dough to 1/2 to 3/4 inch thickness. Cut into circles (use a glas or a cookie cutter).
4. Place on ungreased cookie sheet and bake for 12 – 15 minutes, until the tops are lightly browned and the aroma of bacon-y-goodness fills the kitchen. Enjoy
