Pork Belly Confit Spot Prawns with 5 Spice
It’s Spot Prawn season and my friend came up with this recipe. It’s not based off of anything and it was just a regular dinner at home, but I liked it. It was simple, approachable, easy and affordable. Well, Spot Prawns are pricey this year at about $21/lb, but they’re hard to resist.
Spot Prawns are delicious any way you cook them and this recipe isn’t a “bacon makes everything better”, it’s just a good recipe. The pork belly gives it a richer flavour and it’s a nice surf and turf dish for any day of the week.
Pork Belly Confit Spot Prawns with 5 Spice
Ingredients
- 1lb live spot prawns rinsed
- extra virgin olive oil to fill shallow pan
- 1/2lb pork belly sliced thinly
- 2 tbsp rice flour
- cilantro
- 1/2 tsp sea salt
- 1/4 tsp white pepper
- 1/4 tsp fennel
- 1/4 tsp cinnamon
- 1/8 tsp ground cloves
- dash of cayenne
