9th Day of Christmas: Pork Crown Roast Recipe

During Christmas in November at the Jasper Park Lodge, participants were treated to a serving of pork crown roast at the Gala Dinner. Executive Sous Chef Paul Shewchuk kindly shared the Jasper Park Lodge’s recipe for a Gala Dinner worthy Pork Crown Roast.
Crown roast:
Ingredients:
1 crown roast tied and frenched and bones wrapped with foil.
5 cloves Garlic minced
2 tbsp salt kosher or sea salt
1 tbsp fresh cracked pepper
Canola oil
Directions:
- Rub the crown roast with a little canola oil. Rub with garlic all over the season with salt and pepper
- Let marinate for 4 hours.
- Since the size of each roast will differ, roast in the oven at 325 till the internal temp is 145 remove from the oven.
- Rest and serve.
