Pork Crown Roast

On the 9th day of Christmas go absolutely extravagant with a pork crown roast for a dinner for 9. Whether you top the bones with the little white chef hats or not this roast is a sight to behold. Perfect for a celebratory meal, this may even inspire you to bring something different to your Christmas and holiday meals – your friends and family will be impressed with both the presentation and the flavour of a beautiful Pork Crown Roast.

During Christmas in November at the Jasper Park Lodge, participants were treated to a serving of pork crown roast at the Gala Dinner. Executive Sous Chef Paul Shewchuk kindly shared the Jasper Park Lodge’s recipe for a Gala Dinner worthy Pork Crown Roast.

Crown roast:

Ingredients:

1 crown roast tied and frenched and bones wrapped with foil.
5 cloves Garlic minced
2 tbsp salt kosher or sea salt
1 tbsp fresh cracked pepper
Canola oil

Directions: 

  1. Rub the crown roast with a little canola oil. Rub with garlic all over the season with salt and pepper
  2. Let marinate for 4 hours.
  3. Since the size of each roast will differ, roast in the oven at 325 till the internal temp is 145 remove from the oven.
  4. Rest and serve.
